With my gestational diabetes sorta still out of control (the older endocrinologist isn't too happy with my current numbers and put me on fast acting insulin before dinner and slow acting insulin for right before bed to control my fasting numbers), it's been a challenge to figure out what to cook.
So last night, I made Chicken Tortilla Soup using shredded rotisserie chicken and a big can of enchilada sauce in the crock pot. It was so good I ate too much and ruined my glucose sugar goal all over again...oh well
